The harvest at Domaine les Hautes Cances began on September 9th and lasted for just under a month.
Our small team of grape-pickers allows us to harvest the grapes by hand at optimum maturity. This year, we had to deal with heavy rainfall during the month of September, which required us to be particularly vigilant with regard to the health of the harvest. Indeed, with the ambient humidity, the grapes become more sensitive to the fungus responsible for rot: botrytis cinerea. It is therefore necessary to observe each plot in order to find the best balance between health and maturity. Especially since the black frost that occurred on the morning of April 8, 2021 has considerably affected our plots and reduced the yields.
